Malva Pudding

South African Malva pudding is an unusual choice to round off a Christmas dinner but this delicious family recipe from a McCarthy Stone house manager Kim goes down a treat.

Ingredients

For the pudding

  • 1 tablespoon butter
  • 125ml sugar
  • 1 egg
  • 1 tablespoon apricot jam
  • 15ml white vinegar
  • 1 cup cake flour
  • 1 teaspoon bicarbonate of soda
  • A pinch of salt
  • For the sauce:
  • 125g butter
  • 185ml sugar
  • 65ml water
  • 185ml cream
  • 5ml vanilla essence

Method

  1. To make the pudding
  2. Cream the butter and sugar, add the egg and blend well.
  3. Add the jam and vinegar, mix well
  4. Sift the dry ingredients into the creamed mixture
  5. Pour into a deep round dish about 19cm diameter
  6. Cover with tin foil and bake for 1 hour fan oven 180°c
  7. To make the sauce
  8. Boil the butter, sugar and water
  9. Remove from the stove and then add the cream and vanilla.
  10. Pour over the hot baked pudding
