This frangipane mince pie recipe makes luxurious a change from a traditional Christmas mince pie and comes from McCarthy Stone homeowner, Barbara.

Ingredients
For the pastry
8oz / 200g plain flour
4oz / 100g butter, cut into cubes
1 egg, beaten
2 teaspoons of icing sugar
For the frangipane
3oz / 75g butter, softened
3 oz / 75g castor sugar
1 large egg
3 oz / 75g ground almonds
1/2 teaspoon almond essence
For the filling
Half a jar of mincemeat
Few drops of almond essence
A few flaked almonds for the top ( optional )
Method
To make the pastry
Make the pastry by rubbing in the butter to the flour
Stir in icing sugar
Mix egg with 2 tablespoons of cold water and add to the
dry ingredients
Mix together with a knife until it binds together into a ball. Knead lightly
Cover with cling film and leave to rest in a cool place for
at least 30 mins
To make the frangipane
Beat all the ingredients together until well blended
To make the mince pies
Roll out the pastry and line patty tins
Put 1 teaspoon of mincemeat into each and top with a
generous teaspoon of frangipane
Sprinkle a few flaked almonds on top if liked
Bake in pre- heated oven 180 C fan or Gas 6 for 15 to 20 mins
Turn the oven down towards the end , if the tops are getting too brown
