Chocolate Rum Truffles
This easy but decadent recipe for chocolate truffles with rum and raisins comes from McCarthy Stone homeowner, Margaret.

Ingredients
For the truffles
- 30ml double cream
- 200g dark chocolate
- 75g butter
- 50g icing sugar
- 25g raisins
- 30ml rum
- 75g digestives ( made into crumbs)
- Cocoa/chocolate strands etc. for decoration
Method
- Melt the chocolate
- Add the butter leaving on top of the chocolate until it melts
- Mix in the icing sugar, cream, rum, raisins and biscuit crumbs
- Leave to firm up
- Take a teaspoon at a time and roll into balls
- Roll in drinking chocolate, cocoa or chocolate strands
